Classic Rhubarb Crunch – Sweet, Tart & Buttery!

Ingredients:

Crumb Mixture:

  • 1 cup all-purpose flour

  • 1 cup white sugar
  • 1 cup water

Instructions:

Step 1: Preheat & Prep

Preheat oven to 350°F (175°C). Grease a 9×9-inch or 11×7-inch baking pan.

Step 2: Make the Crumble

In a bowl, mix flour, oatmeal, brown sugar, melted butter, and cinnamon until crumbly.
Press half of the mixture evenly into the bottom of the pan.

Step 3: Layer the Rhubarb

Spread the diced rhubarb evenly over the crust.

Step 4: Prepare the Filling

In a saucepan, combine white sugar, water, and cornstarch.
Heat over low, stirring constantly until the mixture thickens and turns clear.
Once thickened, pour it evenly over the rhubarb.

Step 5: Add the Topping & Bake

Sprinkle the remaining crumb mixture over the rhubarb layer.
Bake for 1 hour or until the top is golden brown and crisp.

Step 6: Serve & Enjoy

Let cool slightly before serving. Enjoy warm with vanilla ice cream or whipped cream!
