Classic Pot Roast with Carrots and Potatoes

Fall-apart tender beef, hearty vegetables, and a rich, savory gravy—all in one pot! This classic pot roast is the ultimate comfort food that brings warmth and nostalgia to your table.

Ingredients:

  • 3 lbs chuck roast
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 large carrots, peeled and cut into chunks
  • 6 small Yukon Gold potatoes, halved
  • 3 cups beef broth
  • 1 cup red wine (optional, but highly recommended)
  • 2 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and black pepper, to taste
  • 2 tbsp cornstarch + 2 tbsp water (optional, for thickening gravy)

Instructions:

1. Preheat & Prep:
Preheat your oven to 325°F (165°C). Pat the roast dry and season generously with salt and pepper on all sides.

2. Sear the Roast:
In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned—about 4 minutes per side. Remove and set aside.

3. Sauté Aromatics:
Add chopped onion and minced garlic to the same pot. Sauté for 2–3 minutes until fragrant.

4. Build Flavor:
Stir in the tomato paste, Worcestershire sauce, thyme, and rosemary. Let everything cook for another minute to bring out the flavors.

5. Deglaze:
Pour in the beef broth and red wine. Scrape up any browned bits from the bottom of the pot—these are flavor gold!

6. Add Roast & Veggies:
Return the roast to the pot and nestle it into the liquid. Surround it with carrots and potatoes.

7. Braise:
Cover with a lid and transfer to the oven. Cook for 3–4 hours, or until the meat is fork-tender.

8. Optional Gravy:
For a thicker gravy, remove the roast and veggies. In a small bowl, whisk cornstarch and water. Stir into the cooking liquid and simmer over medium heat until thickened.

9. Serve:
Slice or shred the roast, spoon over the rich gravy, and serve with the tender vegetables. Garnish with fresh parsley if you’re feeling fancy!
