Classic Muffins – The Perfect Everyday Bake


Soft, fluffy, and endlessly versatile—these Classic Muffins are a go-to recipe every baker should have in their back pocket. Whether you’re serving them plain, adding berries, or sprinkling cinnamon sugar on top, this simple base yields beautifully golden muffins with the perfect crumb.

Ingredients (Makes 12 muffins):

  • 2 cups all-purpose flour
  • ½ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • ⅓ cup vegetable oil or melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract (optional but recommended)

Instructions:

1. Preheat & Prep

Set your oven to 180°C (350°F) and line a 12-cup muffin tin with paper liners or lightly grease with oil or butter.

2. Mix the Dry Ingredients

In a large bowl, combine the flour, sugar, baking powder, and salt. Give it a quick whisk to evenly distribute everything.

3. Whisk the Wet Ingredients

In another bowl, whisk together the milk, oil (or melted butter), egg, and vanilla extract until smooth and well blended.

4. Combine Wet & Dry

Pour the wet ingredients into the dry mixture. Gently fold together with a spatula or spoon until just combined—a few lumps are totally okay! Avoid overmixing to keep the muffins light and fluffy.

5. Fill the Muffin Cups

Divide the batter evenly among the muffin cups, filling each about two-thirds full.

6. Bake to Perfection

Bake for 18–20 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.

7. Cool & Serve

Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.


Optional Add-Ins:

  • Blueberries, chocolate chips, or chopped nuts (add ¾ cup to the batter)
  • A sprinkle of cinnamon sugar on top before baking
  • A fruit jam swirl in the center for a surprise!

Storage:

Store muffins in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
