Why You’ll Love These Lemon Bars
- Bursting with real lemon flavor from fresh juice
- Simple ingredients you probably already have
- Perfectly balanced between sweet and tangy
- Make-ahead friendly and great for gatherings
Ingredients
For the crust:
- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, cold and cut into cubes
For the lemon filling:
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1 1/2 cups fresh lemon juice
- 4 large eggs
How to Make Classic Lemon Bars
1. Preheat & Prep
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
2. Make the Crust
In a medium bowl, whisk together the flour and powdered sugar.
Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
Press the mixture firmly into the bottom of the prepared pan to form an even layer.
Bake for 15–20 minutes, or until lightly golden around the edges.
3. Prepare the Lemon Filling
While the crust bakes, whisk together the granulated sugar, flour, and salt in a large bowl.
Add in the lemon juice and eggs, whisking until smooth and well combined.
4. Bake Again
Pour the lemon mixture over the hot crust (no need to cool it first!).
Return to the oven and bake for 20–25 minutes, or until the filling is set and just barely jiggles in the center.
5. Cool & Slice
Allow the bars to cool completely in the pan, then refrigerate for at least 1 hour for clean slicing.
Dust with extra powdered sugar if you like, then cut into squares or triangles.
Tips & Variations
- Use Meyer lemons for a slightly sweeter, floral twist
- Add a touch of lemon zest for extra zing
- Store in the fridge for up to 5 days—if they last that long!
- Want a thicker lemon layer? Use a smaller pan like 9×9 and bake a bit longer
