Cheesy Stuffed Shells with Turkey & Chicken Sausage

Bubbly, saucy, and packed with cheesy goodness—this dish is the definition of comfort food!

Stuffed shells are one of those timeless, cozy meals that bring everyone to the table. This version features tender jumbo pasta shells filled with a creamy ricotta cheese blend, nestled in a savory meat sauce made with ground turkey and chicken sausage. Topped with melty mozzarella and a sprinkle of Parmesan, every bite is pure joy!

It’s hearty, comforting, and great for feeding a crowd—or just enjoying leftovers the next day (they’re even better!).

Ingredients:

For the Shells & Sauce:

  • 1 box jumbo pasta shells
  • 2 jars spaghetti sauce (your favorite brand)
  • 1 lb ground turkey
  • 1 lb chicken sausage (casings removed)

For the Cheese Filling:

  • Ricotta cheese (about 15–16 oz or to your taste)
  • 1–2 eggs (start with one)
  • ½ cup shredded Parmesan cheese
  • 1 cup shredded mozzarella cheese

For Topping:

  • Remaining Parmesan & mozzarella cheese

Optional Seasonings for Ricotta Mixture:

  • Italian seasoning
  • Garlic powder
  • Onion powder
  • Cayenne pepper (for a kick!)
  • Salt & pepper, to taste

Instructions:

1️⃣ Cook the Meat Sauce

In a large skillet, brown the ground turkey and chicken sausage over medium heat. Season as desired and cook until fully browned. Drain any excess grease.

Pour in the two jars of spaghetti sauce, stir to combine with the meat, and keep warm on low while you prep the shells.

2️⃣ Boil the Pasta

Bring a large pot of salted water to a boil. Cook the jumbo shells for about 10 minutes—you want them just under al dente so they hold their shape when stuffed. Drain and set aside to cool slightly.

3️⃣ Make the Ricotta Filling

In a large bowl, combine ricotta cheese, 1 egg, Parmesan, and mozzarella. Mix until smooth. Add your favorite seasonings (Italian herbs, garlic powder, etc.) for extra flavor. If needed, add a second egg to stretch the filling.

4️⃣ Assemble the Dish

Preheat oven to 375°F (190°C).

Spread a layer of your meat sauce across the bottom of a large baking dish.

Stuff each shell generously with the ricotta mixture and nestle it into the sauce-lined dish. Once all the shells are stuffed and arranged, pour the remaining meat sauce over the top.

Sprinkle the rest of your mozzarella and Parmesan over everything for that golden, gooey finish.

5️⃣ Bake to Perfection

Cover the dish with foil and bake for 25 minutes. For a crispy, cheesy top, remove the foil and broil on high for 2–5 minutes, watching closely to avoid burning.

Tips & Notes:

  • Don’t overcook the shells! They’ll finish softening in the oven.
  • Want extra flavor in the ricotta mix? A little fresh basil or sautéed spinach makes a tasty twist.
  • This recipe makes great leftovers and is freezer-friendly too—perfect for meal prep!
