Cheesy Potato Fingers 🥰


Golden, crispy on the outside, and filled with gooey cheese on the inside — these potato fingers are the ultimate comfort food!

Ingredients:

  • Boiled potatoes, mashed until smooth
  • 2 garlic cloves, finely minced
  • 2 egg yolks
  • Shredded cheddar or mozzarella cheese (for stuffing)
  • Salt & black pepper, to taste
  • Oil, for frying
  • Breadcrumbs (or crushed rusk/cookies)
  • Chopped fresh parsley

Instructions: 😍

  1. Mix it all together:
    In a bowl, combine the mashed potatoes, garlic, egg yolks, salt, pepper, and chopped parsley. Mix until everything is well incorporated and the mixture is smooth.
  2. Shape & stuff:
    Take a portion of the mixture and shape it into a small disc or finger shape. Place a small piece of cheese in the center and carefully seal it, reshaping it into a finger or nugget shape.
  3. Coat it:
    Dip each piece into a beaten egg, then roll it in breadcrumbs until fully coated.
  4. Fry until golden:
    Heat oil in a pan and fry the potato fingers until they’re golden and crispy on all sides.
  5. Drain & serve:
    Transfer them onto paper towels to drain excess oil. Serve hot and enjoy the cheesy goodness!
