Cheesy Potato Fingers 🥰

Golden, crispy on the outside, and filled with gooey cheese on the inside — these potato fingers are the ultimate comfort food!
Ingredients:
- Boiled potatoes, mashed until smooth
- 2 garlic cloves, finely minced
- 2 egg yolks
- Shredded cheddar or mozzarella cheese (for stuffing)
- Salt & black pepper, to taste
- Oil, for frying
- Breadcrumbs (or crushed rusk/cookies)
- Chopped fresh parsley

- Mix it all together:
In a bowl, combine the mashed potatoes, garlic, egg yolks, salt, pepper, and chopped parsley. Mix until everything is well incorporated and the mixture is smooth. - Shape & stuff:
Take a portion of the mixture and shape it into a small disc or finger shape. Place a small piece of cheese in the center and carefully seal it, reshaping it into a finger or nugget shape. - Coat it:
Dip each piece into a beaten egg, then roll it in breadcrumbs until fully coated. - Fry until golden:
Heat oil in a pan and fry the potato fingers until they’re golden and crispy on all sides. - Drain & serve:
Transfer them onto paper towels to drain excess oil. Serve hot and enjoy the cheesy goodness!
