Ingredients (Makes about 12 muffins)
- 2 cups mashed potatoes (cooled—leftovers work great!)
- 1 cup shredded cheddar cheese
- ½ cup milk
- ¼ cup butter, melted
- 2 eggs
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup all-purpose flour
- 2 tsp baking powder
Instructions
1. Preheat & Prep
Preheat your oven to 375°F (190°C) and grease a standard 12-cup muffin tin (or line with paper liners if you prefer easy cleanup).
2. Mix the Wet Ingredients
In a large mixing bowl, stir together the mashed potatoes, shredded cheddar cheese, milk, melted butter, eggs, garlic powder, salt, and pepper until fully combined and creamy.
3. Add the Dry Ingredients
In a separate bowl, whisk together the flour and baking powder. Gradually fold the dry mix into the mashed potato mixture, stirring just until incorporated—don’t overmix!
4. Fill the Muffin Tin
Spoon the batter into your muffin tin, filling each cup about ¾ full.
5. Bake
Bake for 20–25 minutes, or until the tops are golden brown and a toothpick comes out clean from the center.
6. Cool & Serve
Let them cool for a few minutes in the pan, then pop them out and serve warm!
Serving Ideas & Variations
