Ingredients

  • 4 large russet potatoes, thinly sliced
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups milk (whole or 2%)
  • 1 ½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2–3 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme (optional but delicious)
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

1. Preheat the Oven:

Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray.

2. Make the Creamy Garlic Sauce:

In a medium saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1–2 minutes until fragrant.
Whisk in the flour and stir for 1 minute to form a golden roux.
Slowly pour in the milk while whisking continuously to avoid lumps. Let the sauce cook for 2–3 minutes, stirring often, until it thickens slightly.

Add salt, pepper, and thyme. Turn off the heat and stir in 1 cup of the shredded cheddar cheese and all of the mozzarella. Stir until melted and smooth.

3. Layer the Potatoes:

Spread half of the sliced potatoes evenly in the prepared baking dish.
Pour half of the cheesy garlic sauce over the top, spreading it evenly.
Add the remaining potato slices, then pour the rest of the sauce on top, making sure everything is covered.

4. Top with More Cheese:

Sprinkle the remaining ½ cup cheddar cheese and the Parmesan cheese evenly over the top layer.

5. Bake Until Golden:

Cover the dish with foil and bake for 30 minutes.
Then remove the foil and bake for another 20–25 minutes, or until the top is beautifully golden and the potatoes are fork-tender.

6. Garnish and Serve:

Let the scalloped potatoes sit for 5 minutes before serving—this helps the layers settle.
Garnish with freshly chopped parsley for a pop of color and freshness.

Make It Your Own

Want a smokier vibe? Add a handful of cooked, crumbled bacon between the layers.

Need a shortcut? Use a mandoline to slice the potatoes ultra-thin and evenly.

Feeling extra indulgent? Stir a little cream into the milk for an even richer sauce.
