Ingredients
For the Chicken Fritters:
- 1 ½ lbs boneless, skinless chicken breasts (about 3 large)
- 2 large eggs
- ⅓ cup mayonnaise
- ⅓ cup all-purpose flour (or cornstarch/potato starch for gluten-free)
- 4 oz mozzarella cheese, shredded (about 1 ⅓ cups)
- 1 ½ tbsp fresh dill, chopped
- ½ tsp salt (adjust to taste)
- ⅛ tsp black pepper
- 2 tbsp light olive oil (or any high-heat cooking oil)
For the Garlic Aioli Dip (Optional):
- ⅓ cup mayonnaise
- 1 garlic clove, minced or pressed
- ½ tbsp lemon juice
- ¼ tsp salt
- ⅛ tsp black pepper
Instructions
1️⃣ Prepare the Chicken Mixture
- Using a sharp knife, finely dice the chicken breasts into small ⅓-inch pieces. (Tip: Slightly freezing the chicken beforehand makes slicing easier!)
- In a large mixing bowl, combine the diced chicken, eggs, mayonnaise, flour, shredded mozzarella, chopped dill, salt, and pepper. Stir well until evenly incorporated.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours (or overnight) to allow flavors to meld.
2️⃣ Cook the Fritters
- Heat 1 tbsp oil in a large non-stick skillet over medium heat.
- Scoop heaping tablespoons of the chicken mixture into the pan, flattening each slightly with the back of a spoon.
- Cook uncovered for about 3-4 minutes per side, or until golden brown and fully cooked through. (If they brown too fast, lower the heat!)
- Repeat with the remaining mixture, adding more oil as needed.
3️⃣ Make the Garlic Aioli (Optional)
- In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, salt, and pepper.
- Stir until smooth and creamy.
Serving Suggestions
- Enjoy these fritters fresh from the pan, served with a side of garlic aioli, ranch dressing, or spicy sriracha mayo.
- Pair with a light salad or roasted vegetables for a balanced meal.
- Serve as sliders on mini buns for a fun party snack!
