These crispy, cheesy chicken fritters are a perfect blend of juicy chicken, gooey mozzarella, and fresh herbs. They’re easy to make, packed with flavor, and pair beautifully with a creamy garlic aioli dip. Great for appetizers, snacks, or a quick dinner!

Ingredients

For the Chicken Fritters:

  • 1 ½ lbs boneless, skinless chicken breasts (about 3 large)
  • 2 large eggs
  • ⅓ cup mayonnaise
  • ⅓ cup all-purpose flour (or cornstarch/potato starch for gluten-free)
  • 4 oz mozzarella cheese, shredded (about 1 ⅓ cups)
  • 1 ½ tbsp fresh dill, chopped
  • ½ tsp salt (adjust to taste)
  • ⅛ tsp black pepper
  • 2 tbsp light olive oil (or any high-heat cooking oil)

For the Garlic Aioli Dip (Optional):

  • ⅓ cup mayonnaise
  • 1 garlic clove, minced or pressed
  • ½ tbsp lemon juice
  • ¼ tsp salt
  • ⅛ tsp black pepper

Instructions

1️⃣ Prepare the Chicken Mixture

  1. Using a sharp knife, finely dice the chicken breasts into small ⅓-inch pieces. (Tip: Slightly freezing the chicken beforehand makes slicing easier!)
  2. In a large mixing bowl, combine the diced chicken, eggs, mayonnaise, flour, shredded mozzarella, chopped dill, salt, and pepper. Stir well until evenly incorporated.
  3. Cover the bowl with plastic wrap and refrigerate for at least 2 hours (or overnight) to allow flavors to meld.

2️⃣ Cook the Fritters

  1. Heat 1 tbsp oil in a large non-stick skillet over medium heat.
  2. Scoop heaping tablespoons of the chicken mixture into the pan, flattening each slightly with the back of a spoon.
  3. Cook uncovered for about 3-4 minutes per side, or until golden brown and fully cooked through. (If they brown too fast, lower the heat!)
  4. Repeat with the remaining mixture, adding more oil as needed.

3️⃣ Make the Garlic Aioli (Optional)

  1. In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, salt, and pepper.
  2. Stir until smooth and creamy.

Serving Suggestions

  • Enjoy these fritters fresh from the pan, served with a side of garlic aioli, ranch dressing, or spicy sriracha mayo.
  • Pair with a light salad or roasted vegetables for a balanced meal.
  • Serve as sliders on mini buns for a fun party snack!

Pro Tips for Perfect Chicken Fritters:

✔️ Refrigerate the batter – This helps the mixture firm up, making it easier to shape and cook.
✔️ Use a non-stick pan – It ensures even cooking and prevents sticking.
✔️ Don’t overcrowd the pan – Cook in batches for best results.
