Ingredients

Cauliflower Base:

  • 1 large head cauliflower, cut into florets
  • 2 tbsp olive oil
  • Salt & pepper to taste

Chicken Layer:

  • 2 large chicken breasts, diced
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt & pepper to taste

Cheese Sauce:

  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 oz cream cheese
  • 1 tsp garlic powder
  • ½ tsp dried thyme

Topping:

  • ½ cup shredded cheddar cheese
  • 2 tbsp fresh parsley, chopped

Instructions

1. Roast the Cauliflower

Preheat your oven to 400°F (200°C). Toss the cauliflower florets with olive oil, salt, and pepper, and spread them onto a baking sheet. Roast for 15 minutes until tender and golden at the edges.

2. Cook the Chicken

In a skillet, cook the diced chicken with garlic powder, oregano, salt, and pepper over medium-high heat until fully cooked and slightly browned—about 6–8 minutes. Set aside.

3. Make the Cheese Sauce

In a saucepan, combine heavy cream, cheddar, mozzarella, Parmesan, cream cheese, garlic powder, and thyme. Cook on medium-low heat, stirring constantly until the sauce is smooth and velvety.

4. Assemble the Bake

Lightly grease a 9×13″ baking dish.
Layer in the roasted cauliflower, followed by the cooked chicken.
Pour the creamy cheese sauce evenly over everything.

5. Top and Bake

Sprinkle with the extra cheddar cheese and bake for 15–20 minutes, or until bubbly and golden on top.

6. Serve and Enjoy
