Cheesy Beef and Potato Casserole

Ingredients

  • 1 lb ground beef
  • 4 large potatoes, peeled and cut into ½-inch cubes
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 cup beef broth
  • ½ cup sour cream
  • 1 tsp dried thyme (or fresh thyme sprigs for garnish)
  • ½ tsp paprika
  • Salt and pepper, to taste

Instructions

1. Prep the Potatoes

  • Preheat your oven to 375°F (190°C).
  • In a large pot, bring salted water to a boil. Add the cubed potatoes and cook for 8–10 minutes, until fork-tender. Drain and set aside.

2. Cook the Beef Mixture

  • In a large skillet, heat olive oil over medium heat.
  • Add the diced onion and sauté until softened, about 4 minutes. Stir in the garlic and cook for another minute.
  • Add the ground beef, breaking it up with a spoon. Cook until browned and fully cooked, about 5–7 minutes. Drain excess fat.
  • Stir in the beef broth, sour cream, paprika, thyme, salt, and pepper. Let it simmer for 5 minutes to develop flavor.

3. Assemble the Casserole

  • In a greased 9×13-inch baking dish, layer the cooked potatoes and pour the beef mixture evenly over them.
  • Sprinkle the cheddar cheese and Parmesan cheese over the top.

4. Bake

  • Cover with foil and bake for 20 minutes.
  • Remove the foil and bake for another 10 minutes, or until the cheese is melted and bubbly with golden edges.

5. Garnish & Serve

  • Remove from the oven and let rest for 5 minutes.
  • Garnish with fresh thyme sprigs, slice, and serve warm!
