Cheddar-Stuffed Meatball Bites

Ingredients:
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 large egg
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon Worcestershire sauce
- 1/2 cup ketchup
- 1 tablespoon mustard
- 1/2 cup shredded cheddar cheese
- 1/4 cup fresh parsley, chopped (plus more for garnish)
Instructions:
- Preheat and Prepare:
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper for easy cleanup. - Mix the Meat Mixture:
In a large bowl, combine the ground beef, breadcrumbs, milk, egg, finely chopped onion, minced garlic, salt, pepper, and Worcestershire sauce. Mix everything together thoroughly. - Form the Meatballs:
Take a small amount of the meat mixture and flatten it into a patty in your hand. Add a small portion of cheddar cheese in the center, then fold the meat around the cheese to form a ball. Place each meatball on the prepared baking sheet. Repeat until all the mixture is used. - Make the Glaze:
In a small bowl, mix together the ketchup and mustard to create a simple glaze. Brush the mixture generously over each meatball bite. - Bake the Bites:
Bake the meatballs in the preheated oven for 25-30 minutes, or until they’re fully cooked and the tops are nicely caramelized. - Garnish and Serve:
Once cooked, remove from the oven and garnish with freshly chopped parsley before serving.
