Ingredients
For the Filling:
- 1 lb flank steak or skirt steak, thinly sliced
- 1 medium onion, thinly sliced
- 1 bell pepper (red, green, or yellow), sliced
- 1 tablespoon olive oil
- 1 tablespoon fajita seasoning
- Salt and pepper, to taste
- 1 cup shredded mozzarella cheese
For Assembling:
- 4 large flour tortillas
- 2 tablespoons butter (for grilling)
- Dipping sauce (optional: salsa, sour cream, or guacamole)
Instructions
1. Marinate the Steak
In a bowl, toss the thinly sliced steak with olive oil, fajita seasoning, salt, and pepper. Let it marinate for 15–30 minutes to allow the flavors to soak in.
2. Sauté the Veggies
Heat a skillet over medium-high heat. Add the onions and bell peppers, and cook until they soften and begin to caramelize—about 5–7 minutes. Remove from the skillet and set aside.
3. Cook the Steak
In the same skillet, cook the marinated steak slices over medium-high heat for 3–4 minutes, stirring occasionally, until browned and fully cooked.
4. Assemble the Wraps
Warm the tortillas slightly for easy folding. On each tortilla, layer the steak, sautéed veggies, and a generous handful of mozzarella cheese. Fold over one side of the tortilla to create a half-moon or wrap style.
5. Grill the Wraps
Melt butter in a skillet over medium heat. Add the wraps, pressing them down gently with a spatula. Grill each side for 2–3 minutes or until the tortilla is golden, crispy, and slightly charred.
6. Serve and Enjoy
Cut the wraps in half and serve with your favorite dipping sauce—salsa, sour cream, or guacamole are all great choices!
Tips & Variations:
- Cheese swap: Try cheddar, pepper jack, or a Mexican cheese blend for extra flavor.
- Veggie boost: Add mushrooms, corn, or zucchini for more texture.
- Make it spicy: Toss in some jalapeños or a dash of hot sauce.
