*Ingredients:*
– 1 ½ cups all-purpose flour
– ½ tsp baking soda
– ¼ tsp baking powder
– ¼ tsp salt
– ½ tsp ground cinnamon (optional)
– ½ cup granulated sugar
– ¼ cup brown sugar, packed
– ½ cup unsalted butter, softened
– 2 large eggs
– 3 ripe bananas, mashed
– 1 tsp vanilla extract
– ½ cup chopped walnuts or pecans
– ½ cup sour cream or Greek yogurt (optional for added moisture)
*Instructions:*
* Preheat & Prepare:* Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
* Mix Dry Ingredients:* In a bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon (if using). Set aside.
* Cream Butter & Sugars:* In a separate bowl, beat together softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
* Add Eggs & Bananas:* Add eggs, one at a time, mixing well after each addition. Stir in the mashed bananas and vanilla extract until everything is fully combined.
* Combine Dry & Wet Ingredients:*Gradually fold the dry ingredients into the wet ingredients, being careful not to overmix. If you’re using sour cream or Greek yogurt, fold it in now.
* Add Nuts:* Gently fold in the chopped walnuts or pecans.
* Fill & Bake:* Divide the batter evenly into the muffin tin, filling each cup about ¾ full. Bake for 18-22 minutes, or until a toothpick comes out clean from the center.
