If you’re looking for an appetizer that delivers a crunchy, cheesy, flavor-packed punch, say hello to your new favorite finger food: Bacon Jalapeño Popper Egg Rolls. These golden beauties combine everything you love about jalapeño poppers—creamy cheese, smoky bacon, and a kick of heat—wrapped in a crispy egg roll shell. Yep, it’s snack magic.
Perfect for game days, parties, or whenever you need a little crunchy comfort, they’re easy to make and impossible to stop eating!
Ingredients (Makes 12 egg rolls)
- 8 slices bacon, cooked and crumbled
- 4 jalapeños, seeded and finely diced
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 12 egg roll wrappers
- Vegetable oil, for frying
Instructions
1. Make the Filling
In a mixing bowl, stir together the crumbled bacon, diced jalapeños, softened cream cheese, cheddar cheese, garlic powder, salt, and pepper until smooth and evenly combined.
2. Fill the Egg Rolls
Place an egg roll wrapper on a clean, dry surface like a diamond (pointed side facing you). Spoon about 2 tablespoons of filling onto the lower third of the wrapper. Fold the bottom corner up over the filling, tuck in the sides, and roll tightly. Use a little water to seal the top edge.
3. Repeat & Heat Oil
Repeat the process with the remaining wrappers and filling. While you’re rolling, heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (180°C).
4. Fry to Perfection
Working in batches, fry the egg rolls for 3–4 minutes each, or until golden brown and crispy. Avoid overcrowding the pot so they fry evenly.
5. Drain & Serve
Use a slotted spoon to remove the egg rolls and let them drain on a paper towel-lined plate. Serve them hot with your favorite dipping sauce—we love ranch, chipotle mayo, or a sweet chili glaze for contrast!
Tips for Next-Level Egg Rolls

- Make ahead: Roll them up and refrigerate until ready to fry. They’re perfect party prep.
- Air fryer friendly: Brush lightly with oil and air fry at 400°F (200°C) for 10–12 minutes, flipping halfway.
