Herb-Roasted Chicken Drumsticks with Potato Wedges, Coleslaw & Fresh Veggies

Ingredients (Serves 3–4)

Herb-Roasted Chicken Drumsticks

  • 8 chicken drumsticks
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt & black pepper, to taste

Potato Wedges

  • 4 large potatoes, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp garlic powder
  • Salt & pepper, to taste 7 “LARGE”

Coleslaw

  • 2 cups shredded cabbage mix
  • ¼ cup mayonnaise
  • 1 tbsp apple cider vinegar or lemon juice
  • 1 tsp sugar or honey
  • Salt & pepper, to taste 6 “LARGE”

Fresh Veggies

  • Cherry tomatoes
  • Cucumber slices
  • Lettuce or mixed greens

Instructions

  1. Preheat the oven
    Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper (or use two if needed to avoid crowding).
  2. Season the chicken and potatoes
    In a bowl, toss the drumsticks with olive oil, garlic powder, paprika, oregano, thyme, salt, and pepper until evenly coated.
    In a separate bowl, toss the potato wedges with olive oil, paprika, garlic powder, salt, and pepper.
  3. Roast
    Arrange the chicken drumsticks and potato wedges on the prepared baking sheet(s).
    Roast for 40–45 minutes, turning the potatoes halfway through, until the chicken is golden and cooked through (internal temperature should reach 165°F/75°C) and the potatoes are crispy.
  4. Make the coleslaw
    While the chicken and potatoes are roasting, combine the shredded cabbage mix, mayonnaise, apple cider vinegar (or lemon juice), sugar (or honey), salt, and pepper in a bowl. Mix well and chill in the refrigerator until ready to serve.
  5. Serve
    Plate the herb-roasted drumsticks with the crispy potato wedges, a generous serving of creamy coleslaw, and fresh veggies on the side. Enjoy this comforting family dinner!
