A rich and satisfying breakfast casserole loaded with sausage, bacon, hash browns, and cheese—perfect for a weekend brunch or meal prep!


Ingredients

Protein & Dairy:

  • 1 lb breakfast sausage, crumbled and cooked
  • 1 lb bacon, chopped and cooked crispy
  • 12 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Seasonings:

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper

Other Ingredients:

  • ½ cup green onions, chopped
  • 1 package frozen hash browns (30 oz)

Instructions

1️⃣ Preheat & Prepare Ingredients:

  • Preheat your oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish.

2️⃣ Cook the Meat:

  • In a large skillet, cook the breakfast sausage over medium heat until browned. Drain excess grease and set aside.
  • In the same skillet, cook the bacon until crispy. Drain on paper towels.

3️⃣ Prepare the Egg Mixture:

  • In a large bowl, whisk together:
    • 12 eggs
    • 1 cup milk
    • Garlic powder, onion powder, paprika, salt, and black pepper

4️⃣ Assemble the Casserole:

  • Add the cooked sausage, bacon, hash browns, green onions, and half of the shredded cheese to the bowl.
  • Stir until well combined.
  • Pour the mixture into the greased baking dish and top with the remaining cheese.

5️⃣ Bake & Serve:

  • Bake for 35-40 minutes, or until the casserole is set and the cheese is melted and bubbly.
  • Let cool for 5-10 minutes before slicing and serving.
