Ingredients

- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Prepare the Potatoes:
- Preheat oven to 425°F (220°C).
- In a large pot, boil baby potatoes in salted water for 15-20 minutes until fork-tender. Drain and let cool slightly.
- Place potatoes on a baking sheet. Gently smash each potato using the back of a fork or a potato masher.
