Easy Cheeseburger Soup

Ingredients
For the Soup:
- ½ lb ground beef
- 4 tbsp butter (divided)
- ¾ cup carrots (diced)
- ¾ cup celery (diced)
- ¾ cup onion (diced)
- 1 tsp dried basil
- 1 tsp dried parsley
- 4 cups potatoes (diced)
- 3 cups chicken broth
- ¼ cup all-purpose flour
- 1 to 2 cups Velveeta cheese (cubed, adjust to taste)
- 1½ cups whole milk
- ¾ tsp salt
- ¼ to ½ tsp black pepper
- ¼ cup sour cream

Instructions
Cook the Beef
- In a large pot or Dutch oven, cook and crumble ½ lb ground beef over medium heat for 6-8 minutes until browned.
- Drain excess fat and set aside.
Sauté the Vegetables
- Melt 1 tbsp butter in the same pot.
- Add ¾ cup carrots, ¾ cup celery, ¾ cup onion, dried basil, and dried parsley.
- Cook for 10 minutes, stirring occasionally, until vegetables are tender.
Simmer the Soup
- Add 4 cups diced potatoes, cooked beef, and 3 cups chicken broth.
- Bring to a boil, then reduce heat to low. Cover and simmer for 10-12 minutes until potatoes are fork-tender.
Make the Roux (thickens the soup!)
- In a small pan, melt 3 tbsp butter over medium-low heat.
- Stir in ¼ cup flour and cook for 3-5 minutes, stirring continuously until it bubbles.
- Add this mixture to the soup and bring to a gentle boil for 2 minutes to thicken.
Make it Cheesy & Creamy
- Reduce heat to low.
- Stir in Velveeta cheese, whole milk, salt, and pepper.
- Cook until cheese is fully melted.
- Remove from heat and stir in ¼ cup sour cream for extra richness.
