1 tbsp fresh parsley, finely chopped
1 tbsp fresh thyme, finely chopped
1 tbsp fresh rosemary, finely chopped
2 garlic cloves, minced
1 tsp lemon zest
1 tsp honey
Salt & pepper, to taste

👩‍🍳 Instructions

1️⃣ Prepare the Compound Butter

  • In a bowl, mix together softened butter, parsley, thyme, rosemary, garlic, lemon zest, honey, salt, and pepper.
  • Shape the butter into a log, wrap it in plastic wrap, and refrigerate for at least 30 minutes to firm up.

2️⃣ Prepare the Steak Medallions

  • Season both sides of the steak medallions generously with salt and black pepper.
  • Preheat the grill or grill pan to medium-high heat and brush the steaks with olive oil.

3️⃣ Grill the Steaks

  • Sear the steak medallions for 3-4 minutes per side, until a deep caramelized crust forms.
  • For medium-rare, cook until the internal temperature reaches 130°F (54°C).

4️⃣ Add the Herb Butter

  • Once cooked, remove the steaks from the grill and immediately top with a generous slice of the chilled compound butter.
  • Let it melt into the steak, creating a glossy, flavorful sauce.

5️⃣ Serve & Enjoy

  • Arrange the grilled steak medallions on a plate and serve immediately.
  • Pair with roasted potatoes, grilled asparagus, or a fresh salad for a complete meal.

💡 Pro Tips

Want a smoky flavor? Use hardwood charcoal for grilling.
Prefer pan-seared steak? Use a cast-iron skillet and baste the steak with butter in the last minute of cooking.
Extra flavor boost? Let the steaks rest for 5 minutes before serving to retain juices.
