🧄🧀 Creamy Garlic Parmesan Chicken (Gluten-Free Option!)

A rich, creamy, and cheesy chicken dish that’s packed with flavor! This recipe has been a go-to in my kitchen for years—it’s simple, satisfying, and perfect for any night of the week.
🛒 Ingredients:
🍗 For the Chicken:
✔ 2 large chicken breasts, sliced in half lengthwise
🥣 For the Breading:
✔ 4 tbsp Gluten-Free Bake Mix 2 OR almond flour
✔ 2 tbsp Parmesan cheese (canister)
✔ ½ tsp salt
✔ ¼ tsp black pepper
🧄 For the Garlic Butter Parmesan Sauce:
✔ 2 tbsp butter
✔ 3 tbsp crushed garlic
✔ 1¼ cups chicken stock
✔ 1 cup whipping cream
✔ ¼ cup grated mozzarella cheese
✔ 2 tbsp Parmesan cheese
✔ ½ tsp dried cilantro OR parsley
✔ 2 tsp chopped fresh cilantro OR parsley
🔥 Directions:
1️⃣ Prep the Chicken:
🔪 Slice chicken breasts lengthwise to create thin cutlets.
2️⃣ Make the Breading:
🥣 Mix almond flour (or gluten-free mix), Parmesan cheese, salt, and pepper in a bowl.
🍗 Coat chicken cutlets evenly in the mixture.
3️⃣ Cook the Chicken:
🔥 Heat olive oil in a frying pan.
🍗 Cook chicken until golden brown and almost done, turning frequently. Set aside.
4️⃣ Make the Garlic Butter Parmesan Sauce:
🧈 Melt butter over medium-low heat in another pan.
🧄 Sauté garlic until golden and fragrant.
🥣 Add chicken stock, whipping cream, mozzarella, Parmesan, and dried herbs.
🌀 Stir until the cheeses are melted and sauce thickens.
5️⃣ Combine & Serve:
🍗 Return the cooked chicken to the sauce. Simmer for 1-2 minutes.
🌿 Garnish with fresh parsley or cilantro.
