McGriddle Muffins Recipe

Makes: 12 muffins
Ingredients:
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 egg, beaten
- 1 cup milk (or buttermilk for extra tenderness)
- 1/4 cup melted butter (or vegetable oil)
- 1 tsp vanilla extract
- 2 tbsp maple syrup (plus extra for drizzling)
- 6 cooked sausage patties (or bacon bits, diced ham, or vegetarian substitute)
- 1/2 cup shredded cheddar cheese (optional)
Optional Add-Ins:
- 1/2 tsp cinnamon (for extra warmth)
- Maple glaze (mix powdered sugar + maple syrup + milk)
Instructions:
- Preheat oven to 375°F (190°C) and grease a muffin tin or line with paper liners.
- Mix dry ingredients: In a bowl, whisk together flour, sugar, baking powder, and salt.
- Combine wet ingredients: In another bowl, mix egg, milk, melted butter, vanilla, and maple syrup.
- Fold together: Pour wet ingredients into dry ingredients and stir until just combined (do not overmix; batter should be slightly lumpy).
- Add mix-ins: Gently fold in cooked sausage (crumbled) and cheese (if using).
- Fill muffin cups: Scoop batter into prepared tin, filling each cup 2/3 full.
- Bake for 15–18 mins or until a toothpick comes out clean.
- Optional glaze: Drizzle with extra maple syrup or a maple glaze while warm.
Serving Suggestion:
- Serve warm as a handheld breakfast—great with scrambled eggs or on their own!
- Store in an airtight container for up to 3 days or freeze for longer storage.
