Chili Lime Bean Salad (Easy, Zesty & Healthy!)

Ingredients 🛒

Salad Base

  • 1 (15 oz) can chickpeas, rinsed and drained
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup frozen fire-roasted corn, thawed

Dressing

  • 3 tablespoons lime juice (freshly squeezed)
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Optional Add-ins

  • 1/4 cup chopped cilantro
  • 1/4 cup diced red onion
  • 1/2 diced avocado (for a creamy twist)
  • 1 small jalapeño, finely diced (for extra heat)

Instructions 👩‍🍳

1. Prepare the Salad

  • In a large mixing bowl, combine the chickpeas, black beans, and thawed fire-roasted corn.
  • If using, add in red onion, jalapeño, and cilantro.

2. Make the Dressing

  • In a small bowl, whisk together the lime juice, olive oil, chili powder, cumin, smoked paprika, garlic, salt, and pepper until well combined.

3. Toss and Serve

  • Pour the dressing over the salad ingredients.
