Ingredients
- 🍗 2 lbs bone-in, skin-on chicken thighs
- 🫒 2 tablespoons extra virgin olive oil
- 🧂 Salt & pepper, to taste
- 🧅 Onion & garlic powder, for seasoning
- 🧅 1/4 cup finely chopped onion
- 🧄 5 cloves garlic, minced
- 🌿 1 teaspoon fresh thyme
- 🌿 1 teaspoon dried oregano
- 🌶 1/2 teaspoon crushed red pepper flakes
- 🌿 1/2 teaspoon dried basil
- 🍷 1/4 cup white wine
- 🍗 3/4 cup chicken broth
- 🥛 1/2 cup heavy cream
- 🍅 1/2 cup minced sun-dried tomatoes
- 🧀 1/2 cup freshly grated Parmesan cheese
- 🌿 Fresh parsley, chopped (for garnish)
Instructions
1. Preheat & Prep
- Preheat your oven to 375°F (190°C).
- Season the chicken thighs generously with salt, pepper, onion powder, and garlic powder.
2. Sear the Chicken
- Heat the olive oil in a cast-iron skillet over medium-high heat.
- Sear the chicken thighs for about 4 minutes per side, until beautifully golden and crispy.
- Remove the chicken from the skillet and set aside.
3. Sauté the Aromatics
- Discard all but 2 tablespoons of the oil from the skillet.
- Reduce the heat to medium and add the chopped onion, thyme, oregano, red pepper flakes, and basil.
- Cook for about 3 minutes, stirring, until the onions are soft and fragrant.
- Add the minced garlic and cook for another minute.
4. Create the Sauce
- Pour in the white wine, stirring and scraping up any delicious browned bits from the bottom.
- Let it simmer for about 1 minute.
- Stir in the chicken broth, heavy cream, sun-dried tomatoes, and Parmesan cheese.
- Mix everything until the sauce is creamy and fragrant.
5. Bake to Perfection
- Nestle the seared chicken thighs back into the skillet, spooning some sauce over the top.
- Transfer the skillet to the preheated oven.
- Bake for 20–25 minutes, or until the chicken is fully cooked (internal temp: 165°F / 74°C).
6. Garnish & Serve
- Remove the skillet from the oven.
- Garnish with fresh chopped parsley.
- Serve hot, spooning plenty of that luscious sauce over each serving!
