Ingredients

  • 🍗 2 lbs bone-in, skin-on chicken thighs
  • 🫒 2 tablespoons extra virgin olive oil
  • 🧂 Salt & pepper, to taste
  • 🧅 Onion & garlic powder, for seasoning
  • 🧅 1/4 cup finely chopped onion
  • 🧄 5 cloves garlic, minced
  • 🌿 1 teaspoon fresh thyme
  • 🌿 1 teaspoon dried oregano
  • 🌶 1/2 teaspoon crushed red pepper flakes
  • 🌿 1/2 teaspoon dried basil
  • 🍷 1/4 cup white wine
  • 🍗 3/4 cup chicken broth
  • 🥛 1/2 cup heavy cream
  • 🍅 1/2 cup minced sun-dried tomatoes
  • 🧀 1/2 cup freshly grated Parmesan cheese
  • 🌿 Fresh parsley, chopped (for garnish)

Instructions

1. Preheat & Prep

  • Preheat your oven to 375°F (190°C).
  • Season the chicken thighs generously with salt, pepper, onion powder, and garlic powder.

2. Sear the Chicken

  • Heat the olive oil in a cast-iron skillet over medium-high heat.
  • Sear the chicken thighs for about 4 minutes per side, until beautifully golden and crispy.
  • Remove the chicken from the skillet and set aside.

3. Sauté the Aromatics

  • Discard all but 2 tablespoons of the oil from the skillet.
  • Reduce the heat to medium and add the chopped onion, thyme, oregano, red pepper flakes, and basil.
  • Cook for about 3 minutes, stirring, until the onions are soft and fragrant.
  • Add the minced garlic and cook for another minute.

4. Create the Sauce

  • Pour in the white wine, stirring and scraping up any delicious browned bits from the bottom.
  • Let it simmer for about 1 minute.
  • Stir in the chicken broth, heavy cream, sun-dried tomatoes, and Parmesan cheese.
  • Mix everything until the sauce is creamy and fragrant.

5. Bake to Perfection

  • Nestle the seared chicken thighs back into the skillet, spooning some sauce over the top.
  • Transfer the skillet to the preheated oven.
  • Bake for 20–25 minutes, or until the chicken is fully cooked (internal temp: 165°F / 74°C).

6. Garnish & Serve

  • Remove the skillet from the oven.
  • Garnish with fresh chopped parsley.
  • Serve hot, spooning plenty of that luscious sauce over each serving!
