🥘 Ingredients
For the Cornmeal Porridge:
- 1 cup fine or medium ground cornmeal 🌽
- 4 cups water or broth (chicken or vegetable) 🥣

- ½ cup grated hard cheese (Parmesan or Pecorino) 🧀

For the Braised Beef:
- 2 lbs beef chuck roast or brisket 🥩
- 1 tablespoon oil (olive or vegetable) 🫒
- 1 onion, finely chopped 🧅
- 3 cloves garlic, minced 🧄
- 1 cup beef broth 🍖
- ½ cup red wine (optional) 🍷
- 2 tablespoons tomato paste 🍅
- 1 tablespoon Worcestershire sauce 🌿
- 1 teaspoon fresh thyme leaves 🌱
- Salt & black pepper, to taste 🧂
For the Gravy:
- 1 cup beef broth 🍖
- ¼ cup heavy cream 🥛
- 2 tablespoons butter 🧈
- 1 tablespoon fresh herbs (parsley or cilantro), chopped 🌿
👨🍳 Instructions
🥩 Prepare the Braised Beef:
- Heat oil in a heavy-bottomed pot over medium-high heat. Season the beef with salt & pepper, then sear it on all sides until browned (about 4-5 minutes per side). 🔥
- Remove the beef and set aside. In the same pot, sauté the onion & garlic until soft and fragrant (about 5 minutes). 🧄🧅
- Stir in the tomato paste & cook for 2 minutes, then pour in the red wine (if using) and beef broth. Let the mixture simmer. 🍷🔥
- Return the beef to the pot, add Worcestershire sauce & thyme, then cover & cook on low heat for 3-4 hours, or bake at 300°F (150°C) for about 3 hours until fork-tender. 🕰️
- Shred the beef with two forks, discarding excess fat. Return to the pot & mix with the sauce. Keep warm. 🍖
🌽 Make the Cornmeal Porridge:
- Bring water or broth to a boil in a medium saucepan. Gradually whisk in the cornmeal to prevent lumps. 🥄
- Reduce heat to low, stirring continuously for 20-25 minutes until thick & creamy. 😋
- Stir in butter & cheese, seasoning with salt & pepper. Keep warm. 🧈🧀
🥄 Prepare the Gravy:
- In a small saucepan, simmer 1 cup beef broth with heavy cream over medium heat for 5-7 minutes until slightly reduced. 🍖🥛
