Ingredients
- 2 salmon fillets
- 2 medium potatoes, cut in half
- 1 handful of asparagus, woody ends trimmed
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- 1 tsp paprika
- ½ tsp black pepper
- 1 tsp salt
- ½ tsp dried oregano
- 1 tbsp butter (optional, for finishing)
Instructions
1. Preheat the Oven
Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper or lightly grease it.
2. Roast the Potatoes
In a bowl, toss the halved potatoes with:
- 1 tbsp olive oil
- 1 clove minced garlic
- Salt, pepper, and paprika to taste
Spread them cut-side down on the baking sheet and bake for 15 minutes.
3. Marinate the Salmon
While the potatoes are roasting, season the salmon fillets with:
- 1 tbsp olive oil
- Lemon juice
- 1 clove garlic, minced
- Oregano, salt, and pepper
Let them marinate at room temperature while the oven does its magic.
4. Add Salmon & Asparagus
After 15 minutes, remove the tray from the oven. Move the potatoes to one side and add the salmon fillets and asparagus. Drizzle the asparagus with a little olive oil and sprinkle with salt.
5. Bake Everything Together
Return the tray to the oven and bake for another 12–15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender.
6. Finish and Serve
(Optional) Just before serving, melt 1 tablespoon of butter and drizzle over the salmon. Add a sprinkle of Parmesan over the asparagus if desired. Serve warm and enjoy the fresh, vibrant flavors!
