Ingredients

Instructions
1. Make the Dough
In a large bowl, whisk together the cake flour, baking powder, salt, and sugar.
Add the milk and melted butter, mixing until a soft, pliable dough forms.
If it’s too sticky, dust lightly with flour.
2. Shape and Fry
Roll the dough into small, walnut-sized balls.
Heat oil in a deep pot (about 170–180°C / 340–350°F).
Fry the dough balls in batches until golden brown and puffed — about 2–3 minutes per side.
Remove with a slotted spoon and place on paper towels to drain.
3. Prepare the Filling
In a small bowl, mix the condensed milk and custard until smooth and creamy.
Transfer to a piping bag fitted with a small nozzle.
4. Fill the Doughnuts
Once the puffs are cool enough to handle but still slightly warm, poke a small hole and pipe in the melktert filling until it just begins to ooze.
5. Roll in Cinnamon Sugar
Toss each filled doughnut puff in cinnamon sugar while still warm so it sticks beautifully.
