🌽🧀 Mexican Cornbread Delight 🌶️🍞

Golden, cheesy, and packed with flavor, this Mexican cornbread is the perfect side dish!
Ingredients:
1 cup all-purpose flour
1 cup white cornmeal
1 egg
½ cup oil
1 cup buttermilk
1 can mexi-corn, drained
1 medium onion, diced
1 medium green pepper, diced
1 cup shredded cheese
½ tsp red pepper
1 tsp Crisco (for greasing the skillet)
Directions:
1️⃣ Preheat the Oven:
Set your oven to 400°F (200°C).
2️⃣ Prepare the Batter:
In a large bowl, mix together the flour, cornmeal, egg, oil, buttermilk, mexi-corn, onion, green pepper, shredded cheese, and red pepper. Stir well until fully combined.
3️⃣ Prepare the Skillet:
In a cast-iron skillet, melt 1 tsp of Crisco over medium heat. Ensure the skillet is evenly greased.
4️⃣ Bake:
Pour the batter into the skillet and spread it evenly.
Bake for 30-35 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
5️⃣ Serve:
Let cool for a few minutes before slicing. Enjoy warm with butter or alongside your favorite Mexican dishes!
