Ingredients

- 12 oz ladyfingers (you’ll need about two 7 oz packs)
- 1½ cups lemon curd (store-bought or homemade)
- 1½ cups heavy whipping cream
- 1 tbsp lemon zest
- ⅔ cup powdered sugar
- ¼ cup instant lemon pudding mix (you’ll only need a bit of the package)
- 8 oz mascarpone cheese

- Fresh lemon slices
- Strawberries
- Fresh mint leaves
Instructions
1. Prep the Dish
Lightly spray a 9-inch square baking dish with nonstick spray. Set aside.
2. Dip the Ladyfingers
Pour lemonade into a shallow bowl.
Working quickly, dip each ladyfinger into the lemonade, turning to coat. Don’t soak — just a quick dip!
Let excess liquid drip off, then arrange the soaked ladyfingers in a single layer in your baking dish.
3. Layer the Lemon Curd
Spread half of the lemon curd evenly over the ladyfingers.
4. Make the Creamy Filling
In a large mixing bowl, beat heavy cream and lemon zest with a hand mixer (or stand mixer) for 1–2 minutes.
Gradually add in the powdered sugar and lemon pudding mix and continue beating until thick and creamy.
Add in the mascarpone cheese and beat again until smooth and combined.
5. Assemble Round Two
Spread half of the pudding mixture over the lemon curd layer.
Add a second layer of dipped ladyfingers on top.
Spread the remaining lemon curd evenly, followed by the rest of the pudding mixture.
6. Chill to Perfection
Cover tightly with plastic wrap and refrigerate for at least 6 hours or overnight to let the flavors meld and the layers set.
7. Garnish & Serve
Just before serving, top with lemon slices, fresh strawberries, and mint leaves for a gorgeous finish.
