*Slow-Braised Herb Lamb Shanks* 🥩🌿

Tender, fall-off-the-bone lamb shanks slow-cooked in a rich, aromatic sauce—perfect for a cozy meal!

*Ingredients:*

– 4 lamb shanks

– 2 tbsp olive oil

– 2 onions, finely chopped

– 3 cloves garlic, minced

– 1 carrot, diced

– 2 celery stalks, diced

– 3 cups beef broth (divided)

– 1 can (14 oz) diced tomatoes

– 2 tbsp tomato paste

– 1 tsp fresh thyme

– 1 tsp chopped rosemary – Salt & pepper to taste

*Instructions:*

1️⃣ *Prep & Brown:* – Preheat oven to 325°F (163°C). – Season lamb shanks with salt and pepper. – In a large oven-safe pot, heat olive oil and sear shanks until browned on all sides. Remove and set aside. 2️⃣ *Build the Base:* – In the same pot, sauté onions, garlic, carrot, and celery until softened. – Pour in 1 cup of broth, scraping up any browned bits. 3️⃣ *Simmer & Braise:* – Stir in remaining broth, diced tomatoes, tomato paste, thyme, and rosemary. – Return lamb to the pot, cover, and transfer to the oven. 4️⃣ *Slow Cook:* – Braise for 2 to 2.5 hours until the meat is tender and easily falls off the bone. 5️⃣ *Serve & Enjoy:* – Adjust seasoning and serve hot over mashed potatoes or with crusty bread.
