Ingredients

- 1 package (8 oz) cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 cup crushed graham crackers
- 1/2 cup white chocolate chips, melted
- 1/2 cup fresh raspberries, mashed
- 1/4 cup vanilla wafer crumbs
- 1 tsp vanilla extract
- 1 tbsp heavy cream
- 1/2 cup white chocolate, melted (for coating)
Instructions
1️⃣ Make the Creamy Base
In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and fluffy.
2️⃣ Mix It All Up
Add the crushed graham crackers, vanilla wafer crumbs, mashed raspberries, vanilla extract, and heavy cream. Stir everything together until fully combined.
3️⃣ Fold in the Chocolate
Melt the white chocolate chips in a microwave-safe bowl (30-second intervals, stirring in between). Once smooth, gently fold into the cream cheese mixture.
4️⃣ Shape into Balls
Using your hands or a cookie scoop, roll the mixture into 1-inch balls. Place them on a parchment-lined tray and chill in the fridge for 30 minutes to firm up.
5️⃣ Dip in Chocolate
Once the balls are chilled, melt the remaining white chocolate for coating. Dip each cheesecake ball until fully coated and return them to the tray.
6️⃣ Chill & Serve
Refrigerate the coated balls for 10–15 minutes until the chocolate is set. Then serve and devour!
