Ingredients
- 2 lbs boneless skinless chicken breasts
- 1 onion, sliced
- 1 bell pepper (any color), sliced
- 1 green bell pepper, sliced
- 1 packet fajita seasoning mix (or use homemade – see below)
- 1/2 cup chicken broth or water
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- Salt and pepper, to taste
- Tortillas, for serving
Optional Toppings:
- Sour cream
- Guacamole
- Salsa
- Shredded cheese
Instructions
1️⃣ Layer the Crockpot
Place the chicken breasts in the bottom of your slow cooker.
2️⃣ Add Veggies & Seasonings
Top the chicken with sliced onions and bell peppers. Sprinkle over the fajita seasoning, cumin, chili powder, garlic powder, salt, and pepper.
3️⃣ Add Liquid & Oil
Drizzle in the olive oil and pour the chicken broth (or water) over everything. This keeps the chicken moist and helps the flavors blend.
4️⃣ Slow Cook
Cover and cook:
- On LOW for 6–7 hours
- Or on HIGH for 3–4 hours
The chicken should be fully cooked and fork-tender.
5️⃣ Shred the Chicken
Remove the chicken from the crockpot and shred it with two forks. Return the shredded meat to the slow cooker and stir to combine with the peppers, onions, and flavorful juices.
6️⃣ Serve and Enjoy
Warm up your tortillas, then pile on the shredded chicken and veggies. Add your favorite toppings and dig in!
Tips & Variations
- Make it spicy: Add sliced jalapeños or a pinch of cayenne pepper.
- Low-carb option: Serve over cauliflower rice or in lettuce wraps.
