Ingredients

  • 4 tablespoons olive oil, divided
  • 1½ pounds boneless, skinless chicken thighs

  • Zest and juice of 1 lemon
  • 6 cloves garlic, minced
  • ½ teaspoon crushed red pepper flakes (optional)
  • 1 pint cherry tomatoes, halved
  • ½ cup chicken stock or water
  • 1 tablespoon butter
  • Fresh basil leaves, for garnish

Instructions

1️⃣ Sear the Chicken

Pat the chicken thighs dry with paper towels (this helps them get beautifully golden).
Season both sides generously with salt and pepper.

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
Once hot, add the chicken thighs and cook for 5–6 minutes per side, or until golden brown and fully cooked through.

Simmer for 2–3 minutes, then stir in the lemon zest, lemon juice, and butter.
Let the sauce bubble gently until it starts to thicken slightly, about 2 more minutes.


4️⃣ Finish & Serve

Return the chicken to the skillet, nestling it into the sauce.
Spoon the garlicky tomato mixture over the top and simmer everything together for another 2–3 minutes to meld the flavors.
