Ingredients:
- 3 cups green beans, trimmed
- 4 strips bacon, cooked and crumbled
- 2 1/2 cups mushrooms, sliced
- 1 onion, finely chopped
- 1 clove garlic, minced
- 1/2 cup cream cheese
- 1/2 cup chicken stock
- 1/2 cup shredded cheese (nacho blend or your fave)
- Salt and black pepper, to taste
Optional Crunchy Onion Topping:
- A small handful of sliced onions
- Coconut flour, for dusting
- Oil, for frying
Instructions:
1. Preheat & Prep the Green Beans:
Preheat your oven to 200°C / 400°F.
Boil green beans in well-salted water for about 10 minutes or until fork-tender.
Drain and set aside.
2. Sauté the Veggies:
In a large skillet over medium heat, sauté the onion, mushrooms, and garlic until deeply caramelized—this brings out all the flavor!
Season with salt and pepper.
3. Make It Saucy:
Add chicken stock and scrape up all the golden bits from the bottom of the pan.
Stir in cream cheese and let it melt into a smooth, creamy sauce.
Taste and adjust seasoning if needed.
4. Assemble & Bake:
In a casserole dish, combine the cooked green beans with the creamy mushroom mixture.
Top with shredded cheese and crumbled bacon.

Dust the reserved sliced onions with coconut flour.
