Classic Beef Bourguignon

A French Comfort Classic—Tender Beef, Rich Sauce, and Deep Flavor in Every Bite

Beef Bourguignon (or Boeuf Bourguignon, if we’re feeling très fancy) is the ultimate comfort food for a cozy dinner. This slow-braised dish hails from the Burgundy region of France, where robust red wine and simple ingredients come together in the most magical way. It’s rustic, hearty, and richly flavored with butter-seared beef, tender vegetables, and savory herbs.

Whether you’re hosting a dinner party or just want to warm your soul on a chilly evening, this one-pot wonder is always a winner.


Ingredients:

  • 2 pounds beef stew meat
  • ¼ cup all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon coarse ground black pepper
  • 4 tablespoons unsalted butter
  • 12 ounces frozen pearl onions
  • 2 carrots, cut into 2-inch pieces
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves (or ½ tsp dried thyme)
  • 8 ounces brown mushrooms, quartered

Instructions:

1. Preheat & Prep

Preheat your oven to 325°F (165°C). Get your Dutch oven or heavy oven-safe pot ready.

2. Brown the Beef

In a bowl, toss the beef stew meat with the flour, salt, and pepper until evenly coated.
Melt the butter in the Dutch oven over medium-high heat. Once hot, sear the beef in batches, browning on all sides (about 4–5 minutes). This step locks in flavor and gives the stew its rich base. Remove the beef and set aside.

3. Sauté the Veggies

Add the pearl onions and carrots to the pot. Sauté for 4–5 minutes until lightly browned.
Add in the garlic and cook for another 30 seconds, scraping up any delicious browned bits from the bottom of the pot.

4. Simmer & Slow Cook

Return the beef to the pot. Add the bay leaf and thyme.
Cover with the lid and transfer the pot to your preheated oven.
Bake for 2 hours, allowing the beef to turn melt-in-your-mouth tender and the flavors to deepen.

5. Add Mushrooms & Finish

After 2 hours, stir in the mushrooms and return the pot to the oven for another 1 hour.
The mushrooms will soak up that savory sauce and complete this heartwarming dish with a perfect earthy note.
