Mediterranean Ground Beef Stir Fry

Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced

- 1 bell pepper, chopped
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- ½ cup Kalamata olives, sliced
- 1 tsp dried oregano
- ½ tsp ground cumin
- ½ tsp smoked paprika
- Salt & pepper, to taste
- ¼ cup crumbled feta cheese
- Fresh parsley, for garnish
Instructions
1. Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté for 2–3 minutes until fragrant and slightly golden.
2. Brown the Beef
Add the ground beef to the skillet. Cook, stirring occasionally and breaking it apart with a wooden spoon, until fully browned and no longer pink.
3. Add the Veggies
Toss in the chopped bell pepper, diced zucchini, and cherry tomatoes. Cook for 5–7 minutes until the veggies are tender but still vibrant.
4. Season It Up
Sprinkle in oregano, cumin, paprika, and a good pinch of salt and pepper. Stir to coat everything in those warming Mediterranean flavors.
5. Finish with Olives & Feta
Add the sliced Kalamata olives and cook for 2 more minutes. Remove from heat, then sprinkle with crumbled feta and chopped fresh parsley.
