Balsamic Grilled Flank Steak Caprese

A flavorful, protein-packed dish with a balance of savory, sweet, and tangy elements, perfect for a quick and impressive meal. Ingredients

For the Balsamic Marinade/Dressing:

  • 1/4 cup balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • 1 large clove garlic, minced or grated
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

For the Steak Caprese:

  • 2 pounds flank steak
  • 2 cups cherry or grape tomatoes
  • 1 cup buffalo mozzarella or fresh mozzarella, diced
  • 2 tablespoons fresh basil, thinly sliced

Instructions

1. Prepare the Marinade:

In a bowl, whisk together all of the marinade ingredients: balsamic vinegar, olive oil, Dijon mustard, honey, minced garlic, salt, and pepper until well combined.

2. Marinate the Steak:

Place the flank steak in a resealable plastic bag or shallow dish and pour half of the balsamic marinade over the steak. Seal or cover and refrigerate for at least 1 hour, or overnight for best results.

3. Grill the Steak:

Remove the steak from the marinade, letting any excess liquid drip off. Preheat the grill to medium-high heat. Grill the steak for about 3-5 minutes per side, depending on your preferred level of doneness. Let the steak rest for 5 minutes before slicing thinly against the grain.

4. Grill the Tomatoes:

While the steak is resting, place the cherry or grape tomatoes on the grill or in a heavy-bottom skillet over medium-high heat. Grill or blister the tomatoes for about 3-5 minutes, just until they are lightly charred and softened.

5. Assemble the Dish:

Thinly slice the grilled flank steak and arrange on a serving platter. Top with the grilled tomatoes, diced mozzarella, and fresh basil. Drizzle with the remaining balsamic marinade/dressing and serve immediately.
