- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp chili powder
- Salt and pepper, to taste
- 1 tbsp fresh lime juice
- 1 tbsp chopped fresh cilantro, for garnish
For the Nachos:
- 1 bag tortilla chips (8 oz)
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/4 cup sliced jalapeños (optional, for heat)
- 1/4 cup sliced black olives (optional)
- 1/4 cup chopped green onions
- 1/4 cup fresh salsa or pico de gallo
- 1/2 cup sour cream
- 1/4 cup guacamole (optional)
Instructions
Step 1: Season and Cook the Shrimp
In a mixing bowl, toss shrimp with garlic powder, paprika, chili powder, salt, and pepper until evenly coated.
Heat olive oil in a large skillet over medium heat. Add shrimp and cook for about 2–3 minutes per side, or until they’re pink and opaque.
Once cooked, drizzle with fresh lime juice and sprinkle with chopped cilantro. Set aside.
Step 2: Preheat Your Oven
Preheat oven to 375°F (190°C).
Step 3: Build the Nachos
Spread tortilla chips across a large baking sheet in an even layer. Top with shredded cheddar and Monterey Jack cheese.
Distribute the cooked shrimp evenly over the cheesy chips.
Step 4: Bake Until Gooey
Bake in the preheated oven for 5–7 minutes, or until the cheese is fully melted and bubbly. Remove from the oven.
Step 5: Add All the Good Stuff
Top your hot, cheesy nachos with dollops of sour cream, guacamole, fresh salsa, jalapeños, black olives, and green onions.
Garnish with more fresh cilantro or a squeeze of lime juice for that bright, fresh pop!
Serving Suggestions
Serve these nachos hot and fresh from the oven with extra lime wedges or your favorite hot sauce on the side. Great with a cold drink, a side of mango salsa, or even a drizzle of spicy queso!
