Lemon Garlic Chicken Bites

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 3 tbsp butter, divided
  • 6 cloves garlic, minced
  • Juice of 1 large lemon (about 2–3 tbsp)
  • 1 tsp lemon zest
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper, to taste
  • ¼ tsp red pepper flakes (optional, for heat)
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Lemon slices, for serving (optional)

Instructions:

1️⃣ Season the Chicken:
In a medium bowl, toss chicken pieces with paprika, garlic powder, onion powder, salt, and pepper. Coat evenly for bold, balanced flavor.

2️⃣ Sear the Chicken:
Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
Add seasoned chicken and sauté for 5–7 minutes, stirring occasionally, until the pieces are golden and cooked through. Remove from skillet and set aside.

3️⃣ Make the Lemon Garlic Sauce:
In the same skillet, melt the remaining 2 tablespoons of butter over medium heat.
Add minced garlic and sauté for about 30 seconds until fragrant.
Stir in lemon juice, zest, and red pepper flakes (if using). Let simmer for 1–2 minutes to slightly reduce and intensify the flavor.

4️⃣ Bring It All Together:
Return the chicken to the skillet and toss to coat in the sauce. Let everything heat through for another 2–3 minutes.

5️⃣ Serve & Garnish:
Sprinkle with fresh parsley, and serve with lemon slices for an extra citrusy pop!
