Ingredients:
- 1 lb rotini pasta
- 2 tbsp olive oil, divided
- ½ lb Italian sausage (or your favorite variety), sliced
- 2 boneless, skinless chicken breasts, cut into chunks
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 3 cloves garlic, minced
- ½ tsp red pepper flakes (optional, for a spicy kick)
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped (for garnish)
- Salt and black pepper, to taste
Instructions:
1️⃣ Cook the Pasta:
Bring a large pot of salted water to a boil. Add the rotini and cook according to package directions until al dente. Drain, reserving 1 cup of pasta water, and set aside.
2️⃣ Sauté the Sausage:
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage slices and cook until browned on both sides, about 4–5 minutes. Remove and set aside.
3️⃣ Cook the Chicken:
In the same skillet, heat the remaining tablespoon of olive oil. Add the chicken chunks, season with salt and pepper, and cook until golden and cooked through, about 6–8 minutes. Transfer to the plate with the sausage.
4️⃣ Make the Sauce:
Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
Toss in the sliced bell peppers and cook for 3–4 minutes until just tender.
Pour in the heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer and cook for 5 minutes until the sauce thickens slightly.
Stir in the Parmesan cheese and red pepper flakes (if using). Season to taste with salt and black pepper.
5️⃣ Combine Everything:
Return the sausage, chicken, and cooked rotini to the skillet. Toss until everything is well-coated in the creamy sauce. Add a splash of reserved pasta water if needed to loosen the sauce.
6️⃣ Serve & Enjoy:
Spoon the pasta into bowls, sprinkle with fresh parsley, and serve hot.
Recipe Tips:
- Swap rotini for penne, rigatoni, or fusilli — any short pasta works great!
- Want it extra cheesy? Add a handful of shredded mozzarella before serving.
- Store leftovers in an airtight container for up to 3 days — it reheats like a dream!
