These Garlic Parmesan Chicken Meatloaves are everything you love about classic meatloaf but made with lean ground chicken, fresh herbs, and loads of garlicky, cheesy goodness. Each mini meatloaf is perfectly portioned, super moist, and topped with melty mozzarella for that crave-worthy finish!
Ingredients
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped fresh parsley
- 1/4 cup milk
- 2 cloves garlic, minced
- 1/2 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/4 cup grated mozzarella cheese (for topping)
- 1 tbsp butter (for basting)
Instructions
- Prep the oven
Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper. - Mix the meatloaf base
In a large bowl, combine ground chicken, breadcrumbs, Parmesan, parsley, milk, garlic, onion powder, salt, and pepper. Mix until just combined — don’t overwork the meat! - Shape the loaves
Divide the mixture into 4 equal portions and shape each into a mini meatloaf. Arrange them on the prepared baking sheet. - Add moisture
Drizzle olive oil over each meatloaf to keep them juicy while baking. - Bake
Bake for 20–25 minutes, or until the meatloaves are golden and fully cooked through (internal temp should reach 165°F / 74°C). - Cheesy topping
In the last 5 minutes, sprinkle mozzarella on top of each loaf and return to the oven until the cheese is melted and bubbly. - Butter baste for flavor
While the loaves finish baking, melt the butter in a small pan. Once the meatloaves are done, drizzle them with the melted butter for an extra touch of richness. - Serve hot
Plate up your garlic parmesan chicken meatloaves with a cozy side like mashed potatoes, steamed veggies, or a fresh salad!
