Low Carb Bacon Cheeseburger Casserole 🍔

A savory, keto-friendly casserole packed with crispy bacon, juicy ground beef, melty cheddar, and all the flavors of a classic cheeseburger—without the carbs!


Ingredients

  • ½ pound bacon, roughly chopped
  • 1½ pounds ground beef
  • 1 tsp seasoning salt
  • 1 tsp garlic powder
  • Salt & black pepper, to taste
  • ½ onion, chopped
  • 2 garlic cloves, minced
  • 2 oz cream cheese
  • 2 tbsp no-sugar-added ketchup
  • 1 tbsp Worcestershire sauce
  • 6 dill pickle chips, sliced
  • 2 eggs
  • ½ cup heavy whipping cream
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish.
  2. Cook the Bacon: In a skillet over medium heat, cook bacon pieces until crispy. Remove and set aside.
  3. Brown the Beef: In the same skillet, cook the ground beef with seasoning salt, garlic powder, onion, and minced garlic. Cook until beef is browned and onions are soft. Drain excess grease.
  4. Mix in Flavor: Stir in the cream cheese, ketchup, and Worcestershire sauce until fully combined and creamy.
  5. Assemble: Spread the beef mixture evenly in the prepared baking dish. Top with chopped bacon and pickle chips.
  6. Make the Egg Mixture: In a small bowl, whisk together eggs, heavy whipping cream, and 1 cup of shredded cheddar.
  7. Pour & Top: Pour the egg mixture over the meat. Sprinkle the remaining 1 cup of cheddar cheese on top.
  8. Bake: Bake for 20 minutes, or until the casserole is set and cheese is bubbly and golden.
  9. Rest & Serve: Let cool for about 5 minutes before slicing and serving.
