Who knew something so simple could taste so good? These 2-Ingredient Sweet Potato Rolls are naturally sweet, delightfully tender, and ready in under 30 minutes. With just mashed sweet potatoes and self-rising flour, this recipe is ideal for busy weeknights, holiday spreads, or when that carb craving hits and you need a quick fix!

Ingredients:

  • 2 cups mashed sweet potatoes (about 4 medium potatoes, cooked & peeled)
  • 2 cups self-rising flour (about 260g)

That’s it! No eggs, no oil, no fuss.

Instructions:

1. Preheat the Oven

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Make the Dough

In a large bowl, mash your cooked sweet potatoes until smooth.
Add the self-rising flour and mix until a shaggy dough forms.

3. Knead

Lightly flour your surface and knead the dough for about 1 minute, just until it comes together into a soft, smooth dough.

4. Shape the Rolls

Divide the dough into 12 equal pieces.
Roll each into a ball and place them evenly spaced on the prepared baking sheet.

5. Bake

Bake in the preheated oven for 15–20 minutes, or until the rolls are puffy and golden brown on top.

Serve & Enjoy!

These rolls are best served warm with a pat of butter, a drizzle of honey, or even alongside soup, chili, or roasted veggies.

Tips & Variations:

  • No self-rising flour? Use all-purpose flour + 1 tbsp baking powder + ½ tsp salt.
  • Add a pinch of cinnamon or nutmeg for a sweet, spiced twist.
  • Brush the tops with melted butter or maple syrup for a shiny, golden finish!

These sweet potato rolls are proof that the simplest things can be the most delicious. Perfect for a cozy fall brunch or your Thanksgiving table — and yes, they freeze beautifully too!
