For the Sliders:

  • 1 lb. shaved roast beef
  • 2 tablespoons olive oil
  • 9 slices provolone cheese
  • 1 large bell pepper, chopped
  • 1/2 cup chopped onion
  • 4 tablespoons butter, divided in half
  • 2 tablespoons mayonnaise
  • 1 dozen dinner rolls

For the Everything Bagel Topping:

  • 1/4 cup sesame seeds
  • 1/4 cup poppy seeds
  • 1/4 cup dried onion flakes
  • 1/4 cup black sesame seeds (optional)
  • 1 tablespoon garlic salt

Instructions

1. Preheat the Oven

Preheat your oven to 350°F. Set aside a 9×13-inch baking pan.

2. Make the Everything Bagel Mix

In a small bowl, combine all the Everything Bagel Topping ingredients: sesame seeds, poppy seeds, dried onion flakes, black sesame seeds (optional), and garlic salt. Store the mixture in an airtight container if making ahead.

3. Prepare the Bagel Butter

In a separate small bowl, mix 2 tablespoons melted butter with 2 tablespoons Everything Bagel Mix. Set this aside for brushing later.

4. Sauté the Vegetables

In a medium skillet over medium-high heat, melt 2 tablespoons butter. Add the chopped bell pepper and onion and sauté until tender and slightly golden around the edges, about 5-7 minutes. Set aside.

5. Cook the Roast Beef

In a large skillet over medium-high heat, add 2 tablespoons olive oil. Cook the shaved roast beef until heated through and slightly grilled, about 5 minutes. Set aside.

6. Assemble the Sliders

Carefully slice the dinner rolls in half, keeping the tops and bottoms intact. Place the bottom halves of the rolls in the prepared baking pan. Spread mayonnaise evenly over the bottom halves.

7. Layer the Ingredients

  • Evenly spread the heated roast beef over the bottom buns.
  • Layer the provolone cheese over the beef.
  • Sprinkle the sautéed vegetables over the cheese.

8. Bake the Sliders

Place the assembled sliders in the oven and bake for 8-10 minutes, or until the cheese has melted.

9. Finish with Bagel Butter

Remove the sliders from the oven. Add the top halves of the rolls. Brush the tops with the Everything Bagel butter mixture, and return to the oven for an additional 5 minutes.

10. Serve

Once the sliders are golden and bubbly, remove them from the oven. Slice them into individual sandwiches, serve, and enjoy!
