Ingredients
- 500g wheat flour (about 4 cups)
- 10g dry active yeast (1 envelope)
- 1/2 cup sugar
- 1 pinch of salt
- 1 egg
- 3 tbsp butter, softened
- 1/2 cup hot milk
- 200ml coconut milk
- 1/2 cup grated coconut
- 1 egg yolk (for brushing)
- Optional: Extra grated coconut for topping
Instructions
1. Activate & Mix
In a large bowl, whisk together the flour, yeast, sugar, and salt.
Add in the egg, softened butter, hot milk, and coconut milk. Stir until a sticky, uniform dough forms.
2. Add Coconut & Knead
Add the grated coconut and knead the dough by hand (or with a stand mixer and dough hook) for about 10 minutes, until smooth and elastic.
3. Let it Rise
Cover the bowl with a clean cloth or plastic wrap and let the dough rise in a warm spot for 1 hour, or until it doubles in volume.
4. Shape & Rest
Punch down the dough, then shape into individual rolls or a single loaf. Place into a greased baking tin or on a parchment-lined tray.
Let rise again for about 30 minutes while you preheat your oven to 180Β°C (350Β°F).
5. Brush & Bake
Brush the top of the dough with the egg yolk and sprinkle with extra grated coconut, if desired.
Bake for 25β30 minutes, or until the bread is golden brown and sounds hollow when tapped.
