  • 70 g sugar

  • 400 ml coconut milk

  • 1 tsp vanilla extract
  • 1 pinch of salt

STEP 1: Make the Dough

    Set your oven to 180°C (350°F) and butter a 23 cm (9-inch) tart pan.
  2. Mix the Dough
    In a mixing bowl, whisk together the flour, sugar, and salt. Add in the softened butter and egg, then knead until a smooth, uniform dough forms.
  3. Shape and Press
    Roll the dough out on a lightly floured surface, then press it into the prepared tart pan. Prick the base with a fork to prevent puffing.

STEP 2: Prepare the Filling

  1. In a separate bowl, whisk together the coconut milk, sugar, eggs, grated coconut, vanilla extract, and a pinch of salt until smooth and well blended.
  2. Fill the Pie
    Pour the coconut filling over the crust and smooth the top.
