- 1 medium cauliflower (about 600g), cut into florets
- 1 medium carrot, shredded (about 100g)
- 1/4 cup (30g) chopped celery
- 1 medium leek (white part only), cleaned and chopped
- 2.5 cups (600ml) water
- 2 tsp chicken bouillon OR 1 vegetable bouillon cube
- 1 bay leaf (optional)
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped (for garnish)

- Prep Vegetables: Wash and chop all vegetables.
- Simmer: In a large pot, combine cauliflower, carrot, celery, leek, water, bouillon, bay leaf, garlic powder and pepper.
- Cook: Bring to boil, then reduce heat and simmer uncovered for 20-25 minutes until vegetables are very tender.
- Blend: Remove bay leaf. Use immersion blender to puree until smooth (or blend in batches).
- Serve: Garnish with fresh parsley. Enjoy hot!
