🥗🔥 Greek Chicken Rice Bowls

A fresh, vibrant, and protein-packed meal, perfect for a weeknight family dinner. Juicy grilled chicken, crisp veggies, fluffy rice, and creamy tzatziki—all in one delicious bowl!

🌟 Ingredients:

For the Chicken:

2 boneless skinless chicken breasts, cubed
2 tbsp olive oil
1 tbsp lemon juice
2 cloves garlic, minced
1 tsp dried oregano
Salt & pepper, to taste

For the Rice & Toppings:

1 cup uncooked brown rice (or your favorite grain)
1 cup cherry tomatoes, halved
1 cup cucumber, diced
½ cup feta cheese, crumbled
¼ cup fresh parsley, chopped
6 mini red bell peppers, grilled

For the Tzatziki Sauce:

½ cup Greek yogurt
¼ cup cucumber, grated & squeezed dry
1 tbsp olive oil
1 tsp lemon juice
1 tbsp fresh dill or chopped mint
Pinch of salt


👨‍🍳 Instructions:

1️⃣ Marinate the Chicken

  • In a bowl, toss chicken cubes with olive oil, lemon juice, garlic, oregano, salt, and pepper.
  • Let it marinate for 20-30 minutes.

2️⃣ Cook the Rice

  • Prepare brown rice (or your chosen grain) according to package instructions.

3️⃣ Grill the Chicken & Peppers

  • Heat a grill pan or skillet over medium heat.
  • Grill chicken for 6-8 minutes, turning occasionally until cooked through & charred in spots.
  • Grill mini bell peppers until tender and blistered.

4️⃣ Make the Tzatziki Sauce

  • In a small bowl, mix together Greek yogurt, grated cucumber, olive oil, lemon juice, dill (or mint), and salt.
  • Chill until ready to serve.

5️⃣ Assemble the Bowls

  • Divide rice into serving bowls.
  • Top with:

    ✅ Cherry tomatoes & diced cucumber
    ✅ Crumbled feta cheese & chopped parsley
  • Drizzle with tzatziki or serve on the side.
