For the Chicken:

For the Rice & Toppings:
✅ 1 cup uncooked brown rice (or your favorite grain)
✅ 1 cup cherry tomatoes, halved
✅ 1 cup cucumber, diced
✅ ½ cup feta cheese, crumbled
✅ ¼ cup fresh parsley, chopped
✅ 6 mini red bell peppers, grilled
For the Tzatziki Sauce:
✅ ½ cup Greek yogurt
✅ ¼ cup cucumber, grated & squeezed dry
✅ 1 tbsp olive oil
✅ 1 tsp lemon juice
✅ 1 tbsp fresh dill or chopped mint
✅ Pinch of salt
👨🍳 Instructions:
1️⃣ Marinate the Chicken
- In a bowl, toss chicken cubes with olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Let it marinate for 20-30 minutes.
2️⃣ Cook the Rice
- Prepare brown rice (or your chosen grain) according to package instructions.
3️⃣ Grill the Chicken & Peppers
- Heat a grill pan or skillet over medium heat.
- Grill chicken for 6-8 minutes, turning occasionally until cooked through & charred in spots.
- Grill mini bell peppers until tender and blistered.
4️⃣ Make the Tzatziki Sauce
- In a small bowl, mix together Greek yogurt, grated cucumber, olive oil, lemon juice, dill (or mint), and salt.
- Chill until ready to serve.
5️⃣ Assemble the Bowls
- Divide rice into serving bowls.
