4 large russet potatoes, peeled & sliced thin (1/8 inch thick)
1 cup heavy cream
½ cup milk
2 tbsp butter
2 cups shredded cheddar cheese (sharp or mild, your choice)
½ cup grated Parmesan cheese
2 cloves garlic, minced
1 tsp dried thyme or rosemary (optional)
½ tsp salt
¼ tsp black pepper
