- 3–4 lb lamb shoulder (bone-in or boneless)

- 1 tbsp lemon zest
- 3 tbsp fresh lemon juice
- 2 tbsp fresh thyme leaves (or 1 tbsp dried thyme)
- 6 cloves garlic, minced
- 1 tsp salt
- ½ tsp freshly ground black pepper
- ½ tsp paprika (optional, for color)
- ¼ cup unsalted butter
Instructions:
- Preheat oven to 325°F (165°C).
