Ingredients:

  • 3–4 lb lamb shoulder (bone-in or boneless)
  • 1 tbsp olive oil
  • 1 tbsp lemon zest
  • 3 tbsp fresh lemon juice
  • 2 tbsp fresh thyme leaves (or 1 tbsp dried thyme)
  • 6 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp freshly ground black pepper
  • ½ tsp paprika (optional, for color)
  • ¼ cup unsalted butter

Instructions:

  1. Preheat oven to 325°F (165°C).
  2. Rub lamb with olive oil, lemon zest, lemon juice, thyme, garlic, salt, pepper, and paprika.
